Is there any way to retrieve CAN Chip status/information like message rate, error frame rate, etc?

Sorry, but no not really. Most of what you mention is handled in CAN at a lower level in the stack that what is accessable by the software. I.e. the CAN chip handles errors. The baud rate is fixed in the config when you make it and is not changable or accessable by a variable.
