I used a MSTD configuration, I deleted all the languages I didn't want leaving only English and Spanish. When I go into the Page Designer and select a text item I want to edit, it shows up with only English and German.
Delete some languages - now wrong ones show up for text

This is a known issue that has been addressed in 2.1. It happens only occasionally - in fact when I tried to duplicated it, I could not. The language list in 2.0 is sorted by index and not by name, which was not optimal and sometimes deletions can cause it to get out of sync.
The workaround is actually pretty simple. Delete all but English and add back Spanish (in this case) and then it should show up correctly when trying to edit it on your text item now.
